WIAW: Still Recovering

If you read my post last week, you know that it has only been 1 week since my gum graft surgery (OUCH!) and I'm still on mushy foods for another 2 weeks. So my foods may not necessarily look super appealing, but I'm doing my best to stay positive and focus on the fact that it is ONLY 3 weeks...and 3 weeks is really a short time in the grand scheme of things.

Going into the day, I was really thankful that I haven't had to puree everything I've eaten the last few days. As long as the food is soft, I've been able to (very slowly) chew it. By the end of the day, this was no longer the case.

Breakfast

Breakfast: cup of coffee, zucchini bread (recipe below), and 2 soft-boiled eggs

Zucchini Bread

Ingredients

  • 1 1/2 cups almond flour
  • 1 1/2 tsp baking soda
  • 1/2 tsp sea salt
  • 1 tsp cinnamon
  • 1 cup grated zucchini, water squeezed out
  • 3 eggs
  • 3 Tbsp maple syrup
  • 1 banana, mashed
  • 1 Tbsp coconut oil, melted
Directions

Preheat oven to 350ºF. Grease 2 mini bread loaf pans.

Combine dry ingredients in a small bowl and set aside.

Combine wet ingredients (excluding zucchini) in a stand mixer and beat on medium for about 2 minutes. Alternatively, combine in a large bowl and whisk together vigorously. Add zucchini and mix until combined.

Pour dry ingredients into wet and mix until incorporated.

Pour batter into loaf pans. Bake for 32-35 minutes, until a toothpick comes out clean.

Remove from oven and let cool for 5 minutes. Transfer bread out of loaf pan and cool on wire rack.

Morning Snack: I combined vanilla protein powder, Greek yogurt, and homemade walnut butter. Then I added lots of cinnamon and stirred it up really well.

Afternoon Snack

Lunch: I'm a big fan of leftovers for lunch. Today is was leftover chicken soup from last night. My chicken soup consists of chicken wings, turnips, carrots, zucchini, parsley, sea salt, and pepper. I also had half an avocado on the side (I have been eating a ton of avocados this week because they are soft and full of super healthy fat).

Afternoon Snack: homemade applesauce and walnut butter...all mixed up in one bowl! This is one of my go-to snacks, and it's perfect for if you ever NEED to eat only soft foods. Do you like my Buzz Lightyear spoon? Eating with this small spoon is a lot easier on my mouth!

Dinner

Dinner: chicken veggie soup, pureed (guess I was wrong about that whole "not needing to puree everything I eat anymore"). I got my stitches out today, and my mouth is killing me...to the point that I had to force myself to eat even this pureed soup.

Since I still have another 2 weeks of this mushy eating to go, I've compiled a few new soup recipes that I am going to try over the weekend in an attempt to spice up my eating routine. I may also try some more smoothies using coconut milk, but I'm a little "smoothied out" as I drank a lot of them over the course of the first few days following surgery.
