WIAW: A Busy Day

Breakfast

I started my day with a breakfast of 2 soft-boiled eggs (with sea salt), 1 slice of my new favorite bread recipe, and a cup of coffee with stevia and homemade coconut milk.

Although this breakfast was super yummy, I don't think I will do this combo again. My stomach felt really heavy for at least 30 minutes after I ate...to the point that I was almost uncomfortable. Next time I will consider the bread my protein (since it has eggs and is made with almond flour) and combine it with some fruit. I may even just try 2 slices of bread with apple butter (and my coffee, of course) and see how I feel.

I had a doctor's appointment scheduled for shortly after my workout (Pure Barre), so I didn't see any point in going home between the two. Instead, I ran into Whole Foods to grab some food and take advantage of their free WiFi to get a little work done.

Morning Snack

Here's what I purchased for my mid-morning snack: water, coconut water (I love to replenish my electrolytes post-workout with coconut water!), plain Icelandic yogurt, and some kiwi. I combined the yogurt with 1/2 scoop of vanilla protein powder and cinnamon in a small glass bowl (all things I brought with me) and topped it with the kiwi. I hadn't had kiwi in awhile, and it was yummy in my yogurt!

Lunch

Lunch consisted of leftover pork sausage meatloaf, sauteed greens and cooked carrots, and half an avocado. The meatloaf was just a typical meatloaf recipe, but I used ground pork sausage from U.S. Wellness Meats instead of beef. You may think this doesn't look like much food for lunch...and you're right. I had already devoured half my lunch (including the avocado) before I remembered to take a picture.

Afternoon Snack

My afternoon snack was squeezed in while I worked in my home office. I don't normally eat yogurt twice in one day, but I was really in a time crunch and had to grab something quick. I had a yogurt with homemade applesauce in it and a slice of my new favorite bread. The drink isn't coffee...it's an herbal coffee called Teeccino. I don't drink caffeine in the afternoon anymore because it really messes up my sleep. I love this drink as a caffeine-free substitute!

Dinner

Once again, I was already well into my meal when I remembered to take a picture of what I was eating, so please excuse the small portions. Dinner was London broil, sauteed spinach with onions and carrots, tomato and cucumber salad, and avocado (can you tell I love this healthy fat?). The small pieces of meat to the left are the pieces I was cutting up for Marcos, my 18-month-old son. He was devouring this meat faster than I could cut it!
