Easter Dinner

Easter Dinner

There’s nothing that I love more than family gatherings. I love spending quality time with my closest family, I love getting dressed up, and I love making a meal that's absolutely delicious while still being Beyond Diet friendly.

Undoubtedly someone always leaves my house saying, "Wow, what a delicious meal, and it was all healthy!?!?"

Here is what’s on the menu for this Sunday's Easter dinner. Even if you don’t celebrate Easter, this is a great menu to keep handy for any upcoming family and friends gatherings.

Start off with a delicious appetizer of Deviled Eggs - and not just any deviled eggs - but deviled eggs made from eggs that you and your kiddos dyed for Easter.

If your colored ones didn’t quite make it to dinner time, you can of course follow this same recipes with regular (boring...hehe) eggs instead.

Now for the main course. The items below are great options for an Easter lunch or dinner:

Make sure the ham is uncured (which can now be found in several supermarkets, particularly Whole Foods and Earthfare). If you’re not able to get an uncured ham (or just don't want to serve ham), you can serve a whole chicken or turkey instead. Birds are not reserved solely for Thanksgiving!

And, no, my family and I are NOT skipping dessert!

This year, I'll be serving The Most Wonderful Carrot Cake.

What I love about making healthy versions of desserts, is that when I see my kids gobbling them up, I don’t cringe thinking about all the processed, unhealthy, gluten laden ingredients. Instead, I know they are enjoying their treat in a healthy way.
