Perfect Picnic Menu

Today is National Picnic Day! For centuries, people have taken their lunches and dinner outside to indulge in the beauty of nature while enjoying their meals. These meals used to be extremely elaborate, involving multiple courses and sophisticated dishes, and being held on the grounds of castles and in Victorian gardens. These days picnics are much more casual, usually being held in a field or a state park on a picnic blanket. That doesn't mean they're any less enjoyable though!

Celebrate National Picnic Day today (or this weekend) by inviting your family or friends to join you for a meal outdoors! Here are some ideas for a menu for your picnic.

  • Homemade Guacamole - I absolutely love guacamole as an appetizer! Cut up a variety of veggies (carrots, celery, bell peppers, etc.) to use for dipping.
  • Baked Chicken A La Isabel - This chicken can be packed up still warm, but it will also taste great cold!
  • Fruit Salad with Coconut Glaze - A fruit salad makes an excellent side dish...healthy AND delicious.
  • You'll need something to drink. Fill a pitcher with water and add a variety of sliced fruit...lemons and strawberries make a great combo! This drink is refreshing and will keep you hydrated.
  • Don't forget about dessert! These Chocolate Chip Cookies would make a great treat for after your meal.
