What I Ate Wednesday

It's been awhile since I've done a What I Ate Wednesday post, and I think it can be really beneficial for people to see what other people (like me) are eating. Whether it's to get new meal ideas, for reassurance that your own meal choices are "normal," or just because you like looking at pictures of food, enjoy some of my most recent eats :)

Morning Mocha

Morning Mocha

  • 1 shot of espresso
  • 1/2 cup boiling water
  • 1 heaping Tbsp raw cacao powder
  • 1/4 cup coconut milk
  • Cinnamon, to taste
  • Stevia, to taste

Note: You can replace the espresso and boiling water with 6 oz of hot coffee

Put cacao powder, coconut milk, and tiny sprinkle of stevia in a mug. Add espresso and boiling water and stir until the cacao powder dissolves. Sprinkle a little cinnamon on top.

Strawberry Chocolate Oatmeal

Strawberry Chocolate Oatmeal

  • 1/3 cup dry oatmeal
  • 1 scoop chocolate protein powder
  • 5 large strawberries, cut in small pieces

Cook oatmeal in water. Let cool a bit. Once cooled, stir in protein powder and mix well. Top with strawberries, and enjoy. This is one of my favorite breakfasts!

I've also been experimenting with a bunch of smoothies in the morning. The following was one of my favorites so far!

Blue and Green Monster Smoothie

Green and Blue Monster Morning Smoothie

  • 2 scoops vanilla protein powder
  • 8 oz water
  • 4-5 ice cubes
  • 1/3 cup frozen blueberries
  • 1/2 large cucumber
  • Handful of raw kale
  • Stevia, to taste
  • Cinnamon, to taste

Put all ingredients in a blender and blend until smooth.

Eggs Cucumbers Asparagus Carrots

10am Snack

Deviled eggs (In case you were wondering, I added 1 tsp Dijon mustard, 1 tsp extra virgin olive oil, sea salt, and a little paprika to the yolks.), sliced cucumbers, asparagus, and cut-up carrots

This was a delicious morning snack!

Leftovers - Lunch

Leftovers Become Lunch

Grilled salmon, sweet potato fries, and roasted brussel sprouts

Using last night's leftovers for today's lunch is the absolute easiest way to ensure you have a healthy and delicious meal!
