Celebrate National Strawberry Month!

Did you know May is National Strawberry Month? It’s really not surprising that this little red fruit has its own month…I mean, everyone loves strawberries! Low in calories and high in calcium and antioxidants, strawberries are pretty to look at, smell good, and taste even better. Plus, strawberries are grown in just about every state in the United States.

So how do you celebrate National Strawberry Month?

Go strawberry picking! "U-pick" strawberries are better for you than the ones you’d buy in a store...and the picking process is fun. (If you have kids, take them with you! They will LOVE picking…and eating…the strawberries.)

Now it’s time to EAT the berries you picked. There are SO many ways eat strawberries. Here are a few of my favorites:

Out of a bowl, freshly washed - Strawberries are delicious all on their own...why mess with a good thing?

Strawberries & Bananas in Greek Yogurt - Combine sliced banana and strawberries in a bowl. Spoon some Greek yogurt on top, and mix until all fruit is coated with yogurt.

Strawberry Chocolate Oatmeal - I shared this recipe with you earlier this week, but I had to mention it again because I love it!

Smoothies! - Strawberries are the perfect fruit to include in a smoothie. Try this super easy recipe for a Pink Lady Smoothie.

Chocolate Covered Strawberries - You just can't go wrong with this classic dessert.

Here's one of my favorite ways to use fresh strawberries - in Strawberry Shortcake Muffins!

Strawberry Shortcake Muffins

Ingredients

  • 2 1/2 cups oats
  • 1 cup Greek yogurt
  • 2 eggs
  • 3/4 cup coconut sugar
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 2 cups diced strawberries

Directions

Preheat oven to 400ºF. Line muffin tin with foil liners.

Place all ingredients (except strawberries) in a food processor. Blend until oats are smooth. Pour mixture into a bowl, and stir in 1 1/2 cups of strawberries.

Pour batter into muffin pan, dividing among the liners. Top each muffin with remaining 1/2 cup of strawberries. Bake for 20-25 minutes (until toothpick comes out clean).
