Test Kitchen Tuesday: Crockpot Italian Chicken

This week's theme on the blog is TIME SAVING. What's more of a time-saver than the crockpot?! You throw in some ingredients in the morning, and by the time you get home from work (or wherever the day may have taken you), there's a delicious dinner waiting for you!

The recipe I'm going to share with you today literally has only 3 ingredients and can be eaten a number of different ways. This is a perfect recipe for those days you know you won't be able to spend any time in the kitchen, but you want something tasty for dinner.

Crockpot Italian Chicken

Here's what you'll need:

  • 2 pounds of chicken (breasts and/or thighs)
  • 1 (12 oz) jar of pepper rings
  • Italian seasoning (mixture of basil, oregano, rosemary, thyme)

Here's what to do:

Arrange chicken in crockpot. Pour the entire jar of pepper rings over the chicken (juice and all). Sprinkle a generous amount of Italian seasoning over everything. Put the lid on the crockpot and cook on low for about 8 hours or high for about 4 hours. Once the chicken is cooked, use 2 forks to shred the chicken in the crockpot. Let the mixture sit in the crockpot on low to soak up some of the liquid left in the pot.

There are many ways to serve this chicken:

  • On top of a salad (no dressing necessary!)
  • On sprouted whole grain bread
  • Over quinoa
  • Just as it is...spoon some into a bowl and enjoy!
