Test Kitchen Tuesday: Spicy Beef Soup

As you know, I'm a big fan of batch cooking. While this meal is great for dinner, it's even better for lunch the next day. So make a pot of my Spicy Beef Soup and feast on it for days!

Spicy Beef Soup

Here's what you'll need:

  • 1 lb grass fed beef
  • 1/2 cup tomato sauce
  • 1 jalapeno, diced
  • 1 onion, diced
  • 2 celery stalks, diced
  • 2 carrots, diced
  • 2 bay leaves
  • 3 cups beef broth
  • 2 tsp cayenne pepper
  • Sea salt and pepper, to taste
  • 1 Tbsp tomato paste

Here's what to do:

Step 1

Dice all vegetables and heat a Dutch oven over medium high heat. (No worries if you don't have one, a large stock pot will do!)

Add all veggies and cook until soft (about 7 minutes).

Add the tomato paste and increase heat slightly. Cook until the bottom of the pan has begun to brown, then incorporate paste into veggies. If you brown them it adds even more flavor!

Step 2

Add the ground beef and cook until browned. At the same time, scrape the brown bits from the bottom of the pan.

When the beef is done, add the tomato sauce, bay leaves and spices. Mix it well so that the flavors are all combined.

Add the broth and bring to a boil until it's reduced by half (about 10 minutes). Cover and simmer for another 20 minutes.

You can always add more cayenne or jalapenos for extra kick. If you have a favorite veggie that is missing, add that in too!
