Pancakes for Breakfast? Yes, Please!

My husband and I have really been making a concerted effort to experiment with new and simple recipes so we can teach our children that they do not need to miss out on anything because they are eating healthy. I know that my kids will eventually eat foods that may make their mommy cry (hahaha), but I want them to learn very early on that healthy food is delicious and show them firsthand how we can implement that at home.

Coconut Pancakes

A couple years ago, when we first started trying out new recipes, my husband decided to make pancakes and bacon for our older son Christian on a Saturday morning. Christian was (and still is) a HUGE fan of bacon, so he went right for it, completely ignoring the round object on his plate. After the bacon was completely gone, he proceeded to look at the pancake like it was a foreign object and almost didn't know what to do with it.

After a few minutes of poking at it, he decided to taste it, and one taste was all it took for him to completely devour the pancake and ask for more.

Now here's the funny part...

When he woke up from his nap that afternoon, the first thing he said to me was "cakes, cakes, eat cakes." That's how I knew the recipe was tested and 100% approved by my (then) 2-year-old!

Coconut Pancakes

Ingredients

  • 4 eggs
  • 1/4 cup coconut flour
  • 1/4 tsp vanilla extract
  • Pinch of nutmeg
  • Pinch of cinnamon
  • 1 Tbsp raw honey
  • 1/4 cup coconut milk

Directions

Mix all ingredients and let sit for 5 minutes.

Oil or grease up your pan using coconut oil or butter; heat over medium heat.

Pour about 1/4 cup of batter for each pancake, allowing each side to brown before flipping. (Watch carefully so it doesn't burn!)
