What I Ate Wednesday #8

What I Ate Wednesday is the perfect way to answer the question so many Beyond Diet members ask... "Isabel, what do you eat all day?"

I haven't participated in a while, so let's take a look at what I ate one day last week...

Beyond Diet Coffee

My day started off (as most do) with a cup of coffee. I like to sweeten my coffee with a pinch of stevia, a dash of cinnamon, and a little coconut milk. (Pretty awesome mug, right?)

For breakfast, I made Coconut Pancakes. My kids love these pancakes too, so we all had some with fresh fruit that morning. Yum!

Lunch of Leftovers

Lunch consisted of chicken meatballs over spaghetti squash with broccoli, cauliflower, and carrots. This was all left over from the previous night's dinner. I ALWAYS make enough at dinner to have for lunch the next day. It makes lunchtime SO much easier...and I'm never tempted to eat "convenience" foods because my food is already made!

Burton's Grill

My husband and I went out to eat with friends that night, and I ordered scallops, zucchini, and green beans. This meal wasn't actually on the menu, but the waiter (and the kitchen staff) had absolutely no problem with me making up my own...and it was delicious.
