A Beyond Diet Special Holiday Dinner - cooked by Isabel

This year the pressure is on. I am doing something I have never done before...

Hosting Christmas Day dinner!!!

Luckily for me, I will have 2 incredible assistants by my side...my mother and my sister.

Many of know a lot about my mom. She struggled with her type 2 diabetes for years before fully embracing the Beyond Diet way of life. My sister has struggled with her weight since we were little girls. She has finally, now, gotten her weight and her health under control and I am SO incredibly proud of her.

With my 2 healthy partners at my side, we are going to host the first ever...

Beyond Diet Christmas Dinner Extravaganza!

That means every single dish serves will be 100% Beyond Diet approved. This is no small feat, as there will be many family members in attendance that still love their traditional holiday foods.

So our goal is to make every dish so delicious that no one even notices it is any different than any other year.

What exactly will we be making?

Here's the proposed menu for this year:

Honey and Citrus Glazed Ham

Easy Green Beans

Roasted Spiced Sweet Potatoes and Pears

Cran-Apple Walnut Salad

Fruit Salad

Healthy Chocolate Peanut Butter Fudge (recipe BELOW)

Chocolate Hazelnut Cookies

Wow - just writing this menu down makes my mouth water!

The recipe for fudge, from BD member Nell, is sooooo simple and delicious I decided to include it right here for you. You could whip this up in no time at all - but beware that at 10-12 servings, you have to share!

Healthy Chocolate Peanut Butter Fudge

Ingredients

  • 1/2 cup coconut oil
  • 1/2 cup cacao powder
  • 1/2 cup raw peanut butter
  • 1/4 cup raw honey
  • 1/2 tsp vanilla extract

Directions

Prepare a muffin pan with 10 muffin liners.

Put all ingredients in the bowl of your food processor. Pulse a few times until everything is smooth and nicely combined (it will be very liquid-y). Don't overmix.

Pour the liquid fudge into the prepared muffin liners dividing evenly between the 10 of them. There will be about a half ince of fudge in each muffin liner.

Place the muffin pan in the refrigerator for 30 minutes or until the fudge has hardened. (Use the freezer for faster hardening).

Remove the muffin liners from the pan and enjoy your delicious, healthy fudge! Store in the refrigerator.
