Here's EXACTLY what to cook this week

Getting dinner on the table is sometimes not as easy as I would like it to be. As much as I am super organized and plan my dinner recipes in advance, I have learned that many times something will come up to derail me from getting a home cooked meal on the table.

That is why I have learned NOT to depend on the afternoon for my meal prep time.

Let me explain…

Before I had kids, I would work diligently through the day and try and be complete with my work tasks and meetings by 5:30 pm. I know for some people that may not be possible, but for me, at that time in my life, I could do it on most days. That left me more than enough time to get a healthy dinner pulled together for my husband and I.

Now, add in two toddlers. Every day is filled with surprises!! Hahaha. And that can be really good and really bad all at the same time. I love the excitement my children bring me each day, but I don’t like that the day can get disorganized pretty easily.

What I have learned about meal planning is that I am better off choosing a dinner that I can prep in the morning or the night before rather than depending on the afternoon to get it done.

I find this strategy works incredibly well for busy moms and for people who work a full day outside the house. When you’re gone from the early morning until past 6pm, it’s hard to fathom that you’re going to whip up a healthy meal in minutes for your hungry family without falling for the easy way out (take-out food and frozen dinners).

Here are my top three ways for getting dinner on the table almost every night of the week.

#1 - Make your crock pot your new best friend.

Yes, you and your crock pot should become inseparable. For anyone who has to be away from their home for a majority of the day or for those of us who just can’t stop the busyness of the day to cook and watch an oven, the crockpot is your solution. I encourage you to find three crock pot recipes that are your family’s favorites and use those during the week.

The options are endless…whole chickens, meatloaf, chili, meatballs…the list goes on and on. My strategy for using the crockpot is to prep any veggies the evening before while I’m cleaning up dinner. So if my chicken recipe calls for sliced onions, I will have those prepared the night before. I will also mix any spices I may need in a small bowl. My goal is to make setting it up in the morning as simple and quick as possible. There’s nothing better than getting home to the delicious smell of your dinner with minimal work.

#2 - Use your freezer wisely.

I have been experimenting with foods that I can freeze for quite some time now. I have found that there really are only a handful of items that do not freeze well like egg and egg dishes, some meals that include potatoes, and water dense vegetables like zucchini that will just turn into mush. Otherwise, burgers, meatballs (made from turkey, chicken, bison, or beef), chili, meat sauces, and baked chicken all freeze incredibly well and will easily defrost in your fridge and be ready for heating up for dinner.

Right now I have a full freezer of meals that I have made over the course of the past 4 weeks so that I’m not “cooking” every single day. For example, if I make meatballs, I will make a double batch so I have plenty to freeze. I will do the same with chicken and meatloaf. Think ahead and experiment with which meals freeze best for you and your family and you’ll see how easily this becomes a “go to” way to get a tasty, healthy dinner ready in no time.

#3 - Become a recipe collector.

I never really understood people’s obsession with recipes and cookbooks until I had a family to feed. When I was just cooking for myself, I didn’t really care much about what my meal looked like and I’m not really all that picky when it comes to flavors. But when the challenge of a picky hubbie and two kiddos came along, I had to get just a bit more creative in the kitchen with my healthy ingredients.

The good news for me and you is that there really is no shortage of great recipes out there. Once you find a cook you like, who you know has tried and tested their recipes to ensure great results, keep their website and books handy so you always have a place to go for delicious, healthy meals. A cook that you love is your kitchen's best friend!
